Apologies in advance if this was answered elsewhere.
I am moving to the US end of this year and declaring NR in Canada in order to do taxes only in the US next year.
I own two homes in Canada, both being rented once we move.
Am I able to write off the mortgage interest and property tax in the US on those properties in Canada?

These are rental, income generating properties, so you will have to report all income in US (and Canada), and use any expense, including mortgage interest, to reduce tax.
