Both my wife and I have dual citizenship (Canada and US). We left Canada over 20 years ago and are Colorado residents. We both work in Colorado, for a Colorado employer. We have a home there and all our finances/investments are in the US. But this year, we might need to stay in Canada / Quebec for more than 6 months. We have no intention of becoming Canadian resident and getting any of the social services offered in Canada. We just want to stay longer than 6 months per year for few years (helping with aging parents). Is there any legal/fiscal ramifications that we should be aware? Is this possible or do we have to limit our stay under 6 months?

Since you don't seems to be staying in Canada due to covid travel restrictions, you become Cdn resident as soon as you establish strong residential ties in Canada. If you keep your ties "light" (ie. stay with parents, you can stay as long as you want without incurring Cdn tax.
