I'm not a Canadian resident yet, but I will continue to have contract income from US employers after I move.
In paying my estimated taxes, do I have a choice of whether to pay Canadian or pay US? If each can be credited against the other, I assume that it will not increase or decrease my total taxes. But if I decide to be "patriotic" (in whichever direction), could I choose which country to pay?

You do not get a choice. Your requirements to report are based on (a) your residence at the time you earn the income, (b) the source of that income, and (c) your citizenship/Immigration status in US.
The IRS, the state, and the CRA decide what is to be reported, and then 'some' credit is given for taxes paid in the other jurisdictions., again, depending on the factors above.
