That is correct, a K1 must have an EAD prior to working, and thus getting Cdn EI. Have a friend that is a Canadian, she is on a CR-1 visa, thus able to work right away. Hi, Im Cdn as well, living in USA on a CR-1 Visa. I did the process from Canada. Since your married, and in the USA, you will want to adjust of status (AOS).
